Why we love it
A nonstick pan is a polite suggestion. The All-Clad D3 12-inch is a fry pan with a point of view. Stainless, bonded all the way to the rim, and wide enough that three chicken breasts are a sear instead of a steam bath.
We love the unfancy metallurgy. Two layers of stainless around an aluminum core, a riveted handle, a flared lip that pours, and an oven rating to 600°F. It works on gas, electric, and induction. All-Clad makes it in Pennsylvania and lists a limited lifetime warranty. The page says hand-wash only, which is the whole care program. When we looked, Amazon.com had the new 12-inch pan, part 4112, at $159.95 and in stock. A lower number on the same page can be Amazon Resale. That is a different pan.
It will not release an egg the way a coating does, and it should not. It builds a fond, and the sauce has something to hold onto. The Lodge can keep the cornbread. This one keeps the steak.
