Why we love it
A kitchen collects knives the way a drawer collects peelers. One of them does the work. The Wüsthof Classic 8-inch is that one: a cook’s knife with a black handle, a full tang, and enough weight to get through an onion without a speech.
We love the unfancy facts. High-carbon stainless, forged as one piece, triple-riveted, a bolster your finger can trust, and a blade Wüsthof tempers to 58 HRC. The model on this listing is 4582-7/20. You wash it by hand, which is the entire maintenance program. When we looked, the single knife was $170 and in stock.
It will not turn a carrot into a personality. It will be the knife you reach for when dinner is actually happening. The peeler can keep the potato eyes. This one keeps the board.
The longer story
This is the Wüsthof Classic 8-inch chef’s knife, the black-handled cook’s knife, model 4582-7/20 (also written 4582/20). Wüsthof’s notes: precision-forged from one piece of high-carbon stainless steel, tempered to 58 HRC, a full tang, a triple-riveted synthetic handle, a full bolster, and the brand’s PEtec edge. It is made in Solingen, Germany. The blade is about 8 inches, the handle about 4.5 inches, and the knife weighs about 8.5 ounces. Hand washing is the recommendation. It is one knife, not a block.
